The “maritati” are the perfect combination of “orecchiette” and “minchiareddi”. Hand made with Apulian durum wheat semolina, local wheat flour, barley flour and water as usual. The “maritati” are the type of pasta typical of Salento and Apulia; ideal seasoning with red meat sauce with pecorino cheese or tomato sauce with cheese cacioricotta.
