Crudaiola raw peppers
Sweet red peppers are grown in open eld in May and picked manually in August and September on our farm. They are washed, sorted, cut into strips, pickled for a few hours, after which that are manually put into jars, along with fresh mint leaves, dry garlic and extra-virgin olive oil.

The pepper obtained this way is fresh, cruncy and meaty. Excellent as a vegetable with meat dishes, in Italian hors- d’oeuvres (with cold cuts and cheeses), it gives any preparation all the fragrance of Mediterranean cuisine, a piece of summer enclosed in a jar.
All our products are farmed with the integrated production technique on open field. Our hand picking allows us to make a first selection on site; and immediately after, the vegetables are transported to the facility to be processed. The processing is carried out strictly according to the tradition of Salento, then the vegetables are dried in the sun and salted by hand. Finally, the packaging is carried out by hand, and following step by step our typical recipes without any preservatives.
