(Horse parsley liqueur, Smyrnium olusatrum)
In the past, this plant was cultivated because of its appreciated scent similar to that of celery but, after celery itself was introduced, the cultivation of this plant was abandoned. Its seeds have antispasmodic proprieties while the plant juice can be used as disinfectant for wounds. The ancient Romans would use its tender leaves and sprouts (both cooked and raw) to make salads as side dish for their meals. They appreciated the bitter taste together with the stimulant and digestive proprieties of this plant.
