Barley frise


The “Barley frise” is one of the most delicious dishes of Salento, it is produced by drying and roasting of whole wheat bread or barley in double firing. The “Barley frise” to be consumed must first be softened by soaking in water and then seasoned.



The tradition of Salento wants the “Barley frise” topped with a little olive oil, tomatoes and a pinch of salt. It is a very simple dish, tasty, very popular with the high summer temperatures. Our “Barley frise” are handmade with barley flour, water, wheat four “0”, sourdough, salt, yeast.

    Ottime come quelle al grano….l’orzo gli da un tocco di sapore in più e diverso dal solito. Personalmente, poiché dal sapore leggermente più forte, le consiglio con la Conserva Mara Salentina, formaggi stagionati e verdure grigliate. Da provare
